Wordpress cutting off posts at £ and other symbols

I've been having this problem on all my web design client's wordpress blogs for quite a while now but its becoming too serious an issue to ignore.

Basically when I include a symbol such as ', £, or €, wordpress ignores it and cuts off the rest of the post OR it replaces the symbols with �.

Whats more is, it only happens on one of my hosting accounts and not the other despite exact wordpress versions and settings on both!

I've tried messing with Charsets and Collations but wouldn't have a clue what I'm doing there!

Help please, I'm desperate!!??

Update

Might just have found a workaround to my own problem above but I can't help feeling its not the ideal solution!

If you go to Wordpress Admin - Settings - Reading and change the Page Encoding from the reccommended UTF-8 to US-ASCII it seems to retain symbols (probably at the expense of something else I fear!)
